Carrot Cake

This is the most moist carrot cake I have ever had and it’s delicious too. You can simply use gluten free flour and baking powder to make a gluten free cake.

2 cups grated carrot
½ cup crushed pineapple
1 ½ cups sugar
½ cup oil
1 ½ teaspoons bicarb soda
1 ½ teaspoons baking powder

½ cup hazelnuts or walnuts
2 cups plain flour
4 eggs
1 teaspoon vanilla essence
½ teaspoon salt

Mix all the ingredients and bake in a loaf tin for 1 hour in a moderate oven (170C)

Cream Cheese Icing
90g cream cheese
45g butter
210g icing sugar
lemon juice

Beat cheese and butter until smooth
Add sifted icing sugar
Add lemon juice
