Chocolate and Orange Cake Recipe

It might seem unusual that a chocolate and orange cake could be a favourite instead of just plain chocolate -  especially for a devout chocoholic!  This cake is so great that I get requests from friends and family to make it.  The cake pictured in the recipe was made yesterday for a friend’s birthday and I had to quickly take a photo of the last piece so you could see the inside of the cake before it was snaffled up.

The inside of the cake is moist and the outside is a little crispy.  I also make a double recipe in an 11″ tin when I need a large cake – double the ingredients and it works just as well.  You simply must try this choc orange cake recipe.

Recipe for a 20cm (8″) Cake Tin

1 cup (250ml) freshly squeezed orange juice
Zest of 2 oranges
1 ¾  cups plain flour
1 teaspoons bicarb soda
1 teaspoons baking powder
1 cup sugar
2 eggs
60g butter
200g chocolate chopped into small pieces
½  teaspoon vanilla essence
¼ cup oil

Butter a 20cm (8″) cake tin and line the base with baking paper.

Cream the butter and sugar.

Add eggs.

Gradually add orange juice, sifted flour and oil.

Add orange zest and vanilla essence.

Mix in half the chocolate (other half goes on top after cake is cooked)

Pour into the prepared tin.

Bake in a 175C preheated oven for around 50-55 minutes  until it is set and a skewer comes out clean.

Top with remaining chocolate while the cake is still warm.
