Chocolate Mousse Cake

300g dark chocolate
150g unsalted butter
6 eggs
1 1/2 teaspoons finely ground star anise (sieved)
60g caster sugar

Line a spring form tin with greasproof paper
Heat oven to 350deg F
Melt chocolate and butter over double boiler (or in microwave)
Separate eggs
Whisk yolks with star anise and 2 tablespoons sugar
Stir into chocolate
Beat egg whites and add the remaining sugar
Fold in one spoon of the egg whites first and then add the rest
Put mixture in tin and bake on middle shelf for 20 minutes
Take out and cover with foil
Once cooled, refrigerate for at least 4 hours before serving
